Lagomt till julbordet tänkte jag dela med mig av nå perfekta aubergine & rödbetsbollar! Dessa saftiga bad boys passar perfekt till julbordet, eller med lite potatisgratäng och grönpepparsås. MM-MH. Recept kommer här på engelska(in englelsk för mina foreign stalkers):

EGGPLANT & BEET "MEAT"BALLS

A perfect alternative to meatballs.

Ingredients
  1. 1 large eggplant
  2. 1 big potato
  3. 3 red beets
  4. 2 tbsp potato flour
  5. 1 tb sp linseeds
  6. 0,5 tsp liquid smoke
  7. 1 garlic clove
  8. salt & pepper
Instructions
  1. 1. Grate the potato and beets and put in a large bowl. Add some salt and the linseeds and let rest for 10 minutes.
  2. 2. Peel the eggplant and cut in small pieces. Fry until soft. Add salt & pepper.
  3. 3. Mash the eggplant and put in the bowl along with grated garlic, potato flour, 2-3 tbsp of breadcrumbs, liquid smoke, salt and pepper. Let rest for 10 minutes
  4. 4. Form to balls and roll in breadcrumbs.
  5. 5. Fry in oil or vegan butter.

  1. I seriousluy doubt that it takes 30 h to make the beetball and honestly don’t write nr s x 2 . dahhhh…..
